The 2021 Vatua! was produced with 90% Muscat and 10% Gewürztraminer, bottled bone dry and disgorged after 33 months in bottle with lees. Given the varietal composition, you can guess this has a completely different aromatic palette, much more exotic and showier, with notes of orange blossom and yeasts and a lively and fresh palate. 10,000 bottles produced. It was disgorged in November 2024.

Description
From the heart of the Penedès, the Colet family cultivates its 24 hectares of vineyards with a clear philosophy: authentic, organic, additive-free sparkling wines with their own identity. Sergi Colet, their oenologist, decided to leave the Cava DO to bottle under the Clàssic Penedès label, seeking greater freedom and honesty in each bubble. Colet Vatua! is the result of this unconventional vision: a dry and surprising sparkling wine made from 90% Moscatel and 10% Gewürztraminer, two varieties more associated with aromatics than with structure. And yet, here both dimensions coexist naturally.
Winemaking
The grapes for Colet Vatua! are organically grown on chalky soils at 400 metres above sea level, northeast facing, and are harvested by hand. The first fermentation takes place in stainless steel tanks at a controlled temperature. Then, the second fermentation in the bottle gives way to an ageing of 33 months on lees, without the addition of expedition liqueur. The result is a completely dry wine(Brut Nature), with fine bubbles and an elegant texture.
Taste
Colet Vatua! seduces from the nose: orange blossom, rose petals, lychee, ripe pear and orange peel float lively, accompanied by a subtle background of toast and yeast. The palate is dry, vibrant, with a firm acidity that balances its aromatic profile. The palate is fluid, with notes of green apple, fresh grapes and a touch of young apricot. Despite its aromatic origins, the wine is taut, upright, and culminates in a long, dry, floral finish.
Ideal as an aperitif, but also with sushi, Thai cuisine or goat's cheese. A rebellious, floral and dry sparkling wine that breaks the mould without losing elegance.
