Can Sumoi Garnatxa Blanca is a natural high altitude wine, made from 100% Garnatxa Blanca.
The grapes were gently crushed and trodden in an inert atmosphere, followed by gentle pressing. Alcoholic fermentation was carried out in stainless steel tanks at a temperature of 18°C, using indigenous yeasts from the vineyard. The fermentation process lasted 27 days and a spontaneous malolactic fermentation took place. The wine has an alcoholic content of 12.5%, a total tartaric acidity of 5.3 g/l and a pH of 3.19. It is important to note that no oenological additives were used in its production and that it was neither stabilised nor filtered, although it contains sulphites in the bottling.
Can Sumoi Garnatxa Blanca stands out as a wine with little colour, but with an aromatic profile. On the palate, it is dry with a bitter finish reminiscent of cut grass and fennel. Despite being a biodynamic wine with minimal intervention, it does not have the aromas and tastes usually associated with natural wines. Its bottle format is also a plus, adding a distinctive touch to its presentation.
