Description
Bonnet Cotton Piscine Olympique is a rosé wine from the Beaujolais region in France, produced under organic farming practices. This wine stands out for its co-fermentation of three grape varieties: Gamay (40%), Muscaris (30%) and Souvignier Gris ( 30%).
Winemaking
The vinification process employs the technique of maceration in alternating layers in whole bunches inside a cement tank, where the grapes ferment spontaneously with indigenous yeasts. After fermentation, the wine is aged for eight months in the same tank, without fining, filtering or the addition of sulphites. This careful winemaking contributes to the fresh and natural character of the wine, respecting the organic profile of the grapes and preserving the purity of their flavours.
Taste
Bonnet Cotton Piscine Olympique offers a vibrant and bold flavour profile. Notes of tart red fruits predominate, with hints of ripe cherry and grapefruit, accompanied by subtle citrus nuances such as lemon. There is also a slight"funky" touch, which adds an interesting and distinct dimension to the wine. This combination of flavours makes it a versatile choice for pairing with grilled white meats, stewed dishes or even fatty fish.
