The trend toward longer aging in barrel of ouillé whites has produced a new 2018 Grand Élevage Chardonnay. It was produced blending wines from different terroirs, and the very warm 2018 vintage produced a wine with no reductive character, with notes of toasted sesame seeds and a riper profile that is also reflected in the 14.5% alcohol and lower acidity. It's textured and nuanced, complex and polished after it matured in barrel for five years. Time adds complexity and nuance to the wine, but the year was clearly marked. It was produced as a blend of two barrels of wine from limestone soils and another two barrels from clay vineyards. It's very clean and opulent but with very good freshness.
