Description

Some Champagnes are born to please everyone... and then there is Thomas Perseval Art'Terre, born to tell the story of a place. Thomas Perseval grew up in Chamery (Premier Cru), in the Montagne de Reims, with the vineyard as his daily landscape and the idea - almost obstinate - that a great artisanal Champagne does not start in the cellar, but in the soil. Eventually he made a decision that was not very comfortable in his environment: to push the estate towards organic viticulture and minimal intervention, looking for more life in the soil and less make-up in the wine. Thomas Perseval Art'Terre is his statement: a blend of Pinot Noir, Meunier and Chardonnay born from three plots in the village itself, on clay-limestone and limestone-sand soils, where freshness and tension command more than exuberance.

Winemaking

At Thomas Perseval Art'Terre, the grapes go in with the idea of intervening the minimum and listening to the maximum. Fermented with indigenous yeasts, the cuvée is aged in used barrels for texture and micro-oxygenation without oak flavour. It then goes to bottle for secondary fermentation and rests for at least 24 months on the lees, refining its foam and depth. Disgorgement is carried out by hand, with minimal sulphur, and the key aesthetic: zero dosage. Brut Nature without a net; purity is not a concept here, it is a technical decision.

Taste

Thomas Perseval Art'Terre is discreet at first, even a little severe, as if it prefers silence to easy applause. With air, a wave of lemon and lime zest appears. Underneath, a minerality of chalk and cold stone underpins everything: salinity, tension and a fine grapefruit bitterness that lengthens the sip. In the background, notes of toast and brioche emerge, subtle, not overly creamy. On the palate it enters straight, dry, with fine bubbles and an acidity that cleanses like a citrus spoonful; the fruit (a nod to nectarine) is always in the background, disciplined by the chalkiness. It finishes long, austere and deliciously gastronomic: seafood, oysters, fish, fried foods... and that smile of someone who knows there are no concessions.
