Description
The wine De Sol a Sol Airén of the Bodega Esencia winery is a white wine that is defined as dense and fresh, made from the processing of Airen grapes, treated under artisanal techniques that ensure the natural expression of the fruit.
It is a wine with personality, which pays homage to all those who have worked from "sunrise to sunset" to work the land in the cultivation of the fruit.
Winemaking
De Sol a Sol Airén is a white wine made from hundred-year-old ungrafted vines, grown in clay and limestone soils that determine the flavour of the fruit to a large extent.
The grapes are harvested following the philosophy of Julian Ruiz Vilanueva, applying 100% artisanal techniques that ensure the minimum intervention of the fruit and that it can express itself without limits or restrictions.
After the harvest, the grapes undergo an alcoholic fermentation phase with spontaneous yeasts, and then they are cold macerated for at least 400 days, using stainless steel barrels.
The must is then aged for at least two months before being bottled without filtration or the addition of sulphites.
