Description
COS Frappato is an authentic expression of Sicilian viticulture, made by Azienda Agricola COS, a pioneering winery in the revival of ancestral winemaking techniques in the Sicilian region. Founded in 1980 by three friends, Giambattista Cilia, Cirino Strano and Giusto Occhipinti (whose initials form the name "COS"), the winery has been at the forefront of organic and biodynamic production on the island. Their approach focuses on maintaining the integrity of the terroir, with a philosophy that respects the natural cycles and biodiversity of the environment.
The wine is made from 100% Frappato, a grape native to the Vittoria area in southeastern Sicily. The vines are more than 15 years old and are planted in soils rich in red earth, composed of sand and limestone, at an altitude of 250 metres above sea level. This soil gives the wine a remarkable minerality and freshness. The grapes are grown following strict organic farming principles, and the grapes are harvested by hand, carefully selecting the bunches at their optimum ripeness.
Winemaking
COS Frappato ferments spontaneously, using indigenous yeasts present in the grapes themselves, which allows the characteristics of the terroir to be authentically expressed. Ageing takes place in cement tanks, which preserves the freshness and purity of the fruit, without the influence of wood. This process culminates in a brief refining in the bottle before release, which balances and refines the flavours.
Taste
COS Frappato is characterised by its vibrant freshness and aromatic complexity. On the nose, it has intense aromas of fresh red fruits, such as cherries and raspberries, combined with floral notes, especially violets, which provide an enveloping delicacy. Subtle hints of mild spices and herbal nuances are also perceived, adding a layer of complexity to the aromatic profile.
On the palate, it is light and fresh, with a balanced acidity that reinforces its lively character. The texture is silky, with very fine tannins that add structure without being invasive. Despite its lightness, the wine has remarkable depth and persistence, with a long, pleasant finish. Its low alcohol content (12%) makes it an ideal choice for those looking for a wine that is easy to drink but with personality.
This wine is versatile in terms of food pairings, working perfectly with appetizers, cold meats, roasted vegetable dishes and light meats. It is an excellent choice to enjoy on both informal occasions and more elaborate meals, as its balanced profile and freshness make it accessible and enjoyable for a wide range of palates.
