Paydos 2018
£33.43 (Inc. VAT bot. 75 cl.) / North Ireland
Robert Parker's Wine Advocate
The Toro wine is the 2018 Paydos that carries a new, much more elegant and clean label, somewhat reflecting the subtle shift in style toward fresher wines while keeping the Toro character. This was cropped from a cooler and wetter year when they picked the grapes on September 20, grapes that were vinified in 5,000-liter tank with indigenous yeasts and a small percentage of full clusters. The wine matured for 15 months in French oak barrels, 20% of them new. It's aromatic and expressive, showing the ripe Toro character, with power and elegance, integrated oak and quite fruit-driven. It's juicy and round, with ripe tannins and a soft but full mouthfeel. 8,000 bottles were filled in March 2020.
