Description

The Danjou Banessy Coste wine is a white wine made with 100% Macabeu grapes from plots located in Espira de l'Agly, where the clay-limestone soils largely determine the saline taste of the fruit.
For the production of this wine, the brothers Sebastian and Benoit use biodynamic techniques, both inside and outside the winery, which is of great benefit for the Macabeu grape, knowing that it is a variety that is not very expressive.
It is a wine that denotes in its flavour the complexity that defines it, making it difficult to determine the specific aromas and flavours that compose it. However, these are balanced to offer more than a drink, an experience.

Winemaking

The winemaking of Danjou Banessy Coste follows the philosophy of the winery of origin by ensuring that biodynamic farming techniques are integrated at each stage of cultivation.
These techniques are based on ensuring that the environment can feed back and function as a system, while at the same time preventing the fruit from being treated with chemicals that alter its flavour or aroma.
When the fruit has reached its optimum level of ripeness, the grapes are harvested, using traditional techniques to preserve their optimum state until they reach the winery.
From this point onwards, a fermentation phase with indigenous yeasts begins, followed by vinification, bottling and marketing.

Taste

The Danjou Banessy Coste wine has aromas of dried fruits balanced with hints of yeast. On the palate, saline touches and a pronounced acidity are usually noticeable.
