4 Monos La Danza del Viento Molino Quemado is a wine that encapsulates the essence and terroir of the Sierra de Gredos, near Madrid. This wine is the result of the passionate work of four friends, Javier García, Laura Robles, David Velasco and David Moreno, who since 2010 have been dedicated to highlighting the purity of the old Garnacha and Albillo grapes, as well as the uniqueness of the granitic soils of the region. By farming organically and using natural winemaking methods, such as indigenous yeasts and whole cluster maceration, they aim to produce wines with incomparable finesse and minerality that faithfully reflect their origin.
Winemaking
Danza del Viento Molino Quemado comes from a single plot, "El Canto de las Brujas", with Garnacha vines over 75 years old, located in San Martín de Valdeiglesias. These vines are planted on rocky granite soils with gneiss and pink granite, at an elevation of 750 metres. The winemaking process includes cold maceration of whole bunches, fermentation with wild yeasts, and ageing for 13 months in 300 and 500 litre barrels. With a limited production of 900 bottles, this wine is a robust and mineral expression, with a more marked structure than the winery's other wines.
