Description
Ve d'Avior Cambuix is a young rosé wine made from Callet, Escursac and Manto Negro grapes from the Balearic Islands. Cambuix has a particular history, and its name means "dishevelled" in Mallorcan, as it symbolises the rebirth after a hailstorm that devastated the vineyards of Cati Ribot's winery.
It is made using biodynamic techniques that not only ensure the best care for the environment, but also avoid the addition of chemicals that may alter the ecosystem and even the taste of the fruit.
It is defined as a vibrant rosé, which combines the subtlety of its flavour with a light and pleasant texture.
Winemaking
The production of Ve d'Avior Cambuix wine begins with the cultivation of the fruit, which is carried out using traditional techniques that guarantee the natural expression of the fruit.
Then, during the harvesting phase, a selection of the best fruit is made, which is then left to macerate with their skins for at least 6 days. After that, the must is fermented with indigenous yeasts in stainless steel barrels.
A part of this wine is matured in steel barrels for 4 months, and the rest remains to be refined.
Finally, both portions are blended together for bottling, without undergoing filtering processes or the addition of sulphites.
Taste
The Ve d'Avior Cambuix wine is characterised by its light taste, but very persistent on the palate.
