Vincent Girardin Saint-Romain Sous Le Château is just that: an intimate encounter between the land, time and the passion of a man who chose to listen rather than impose.
Vincent Girardin Saint-Romain Sous Le Château comes from old vines more than 50 years old, grown on marl, limestone and clay soils in the areas of Sous Roches, Sous Château and Poillange. A combination of noble materials and a cool climate that moulds a lively and intense Chardonnay, which does not yield to fashions or artifice.
Winemaking
Vincent Girardin, a staunch advocate of respectful viticulture, makes it with a simple and powerful philosophy: let nature set the pace. The grapes are harvested by hand, with a rigorous selection process that continues in the cellar. There, the must is slowly transformed into wine in French oak barrels (only 10% new), fermenting spontaneously with indigenous yeasts, and then resting for 14 months on fine lees, without stirring, to preserve all its purity.
Taste
Vincent Girardin Saint-Romain Sous Le Château expresses itself in the glass: refined and mineral, with aromatic notes of lime blossom, lemongrass and boxwood. On the palate, it displays a vibrant, clean acidity, accompanied by a creamy texture and a whisper of ripe white fruit, leaving a saline trail on the finish that invites another sip.
