Pascal Doquet is a winemaker whose winery is located in the commune of Vertus, a picturesque village at the southern tip of the Côte des Blancs, within the famous Champagne region of France.
Vertus is known for its excellence in viticulture, and Pascal continues the rich family tradition that spans several generations. His connection to the world of wine officially began in 1995, when he took over Domaine Doquet-Jeanmaire upon his father's retirement. In 2004, Pascal decided to found his own Domaine, which marked the beginning of his personal project and reflected his innovative and committed approach to nature and terroir.Before assuming the leadership of his own winery, Pascal had worked alongside his parents in the family vineyard since 1982. From the beginning, he showed a strong commitment to sustainability, being one of the first advocates of the lucha razonada, an agricultural approach that minimises the use of chemicals. In 2000, he stopped using chemicals completely in his vineyards, taking a significant step towards organic farming. Vineyards
Pascal Doquet 's vineyards extend over approximately 9 hectares, located on some of the best parcels of the Côte des Blancs. Among his most outstanding plots are the parcels in Vertus, Le Mont Aimé and Le Mesnil-sur-Oger, one of the most prestigious areas of Champagne, famous for its old vines, including the iconic"Champ d'Aoulettes" parcel. These vineyards produce high quality grapes, many of them classified as Premier Cru and Grand Cru, which guarantees the excellence of the grapes for the production of exceptional champagnes.
The soil in this region is mainly cretaceous chalk, a crucial component for the success of the vineyard. This type of soil is porous and allows the roots of the vines to penetrate deep, up to 30 metres, to access the underground water reserves. This aspect is crucial, as the Champagne region receives an average rainfall of 660 mm per year, just at the lower limit for vine cultivation. In addition, the soils contain marl and flint, minerals that add richness and complexity to the wines, contributing to the characteristic structure and minerality of Pascal Doquet's champagnes.
Philosophy
Pascal Doquet 's philosophy is deeply rooted in respect for the terroir and the preservation of the environment. Since 2000, Pascal stopped using chemicals in his vineyards, and in 2010, he achieved organic certification. He firmly believes that the quality of wine begins in the vineyard, which is why he devotes most of his efforts to caring for the vineyards in a natural and sustainable way. His approach includes the use of ground covers to enrich the soil and he uses an ultra-light tractor to avoid soil compaction, thus minimising any negative impact on the vineyard's ecosystem. In addition, Pascal has minimised the use of copper and sulphur, using plant-based treatments.
When it comes to winemaking, Pascal emphasises that "it is the viticulture that makes the difference, not the winemaking". Consequently, his approach during winemaking is as natural as possible, with minimal intervention. Harvesting is done by hand, with a strict selection of grapes both in the vineyard and in the winery. The grapes are pressed pneumatically, using only the best quality must. Fermentation is carried out with indigenous yeasts, and although most of the wines are fermented in enamel-lined tanks, some special vintages are made in neutral oak barrels.
After fermentation, the wines remain on their lees for at least five months, with minimal bâtonnage, and almost all wines undergo malolactic fermentation. All cuvées are aged for a minimum of three years before disgorgement and subsequent market release.
