Description

At the top of the small Saint-Romain valley, where the Côte de Beaune begins to rise between cliffs and forests, the old vines that give life to Vincent Girardin Saint-Romain Vieilles Vignes Rouge are born. Each vine has been sinking its roots into the marl-limestone and clay soils of the Poillanges area for more than 55 years, absorbing every nuance of the landscape. For Vincent Girardin, this red wine represents a declaration of respect: for the land, for the variety and for time. Because there is no rush when the aim is to capture the purest essence of Pinot Noir. The viticulture here is meticulous, almost artisanal, with manual work throughout the season and decisions made according to each vintage.

The AOC Saint-Romain, though less well known than its illustrious neighbours, is a treasure trove for those in search of freshness, finesse and authenticity. The continental climate with cool nights and mild summers brings natural acidity and balance, while the well-drained soils give structure and tension.

Winemaking

Handpicking guarantees a double selection - in the vineyard and on the table - which ensures only the best. Depending on the condition of the grapes, part of the bunch is vinified whole. After cold maceration, fermentation is carefully controlled, with pumping over and punching down to gently extract aromas and colour. Vincent Girardin Saint-Romain Vieilles Vignes Rouge is aged for 15 months in barrels, 30% of which are new, without any excessive pumping over or manipulation. Only a light filtration before bottling, respecting the lunar cycles.

Taste

Light in appearance but deep in character, Vincent Girardin Saint-Romain Vieilles Vignes Rouge displays sour cherry, redcurrant and undergrowth notes. The acidity is lively, with soft tannins and an elegant body that expands on the palate with freshness. Its balance between fruit, minerality and texture makes it a subtle, honest and very gastronomic wine.
