Emilio Lustau has its origins in 1896 as a former warehouseman of Jerez de la Frontera owned by José Ruiz-Berdejo; the winery was located on the outskirts of Jerez and it was not until 1940 when Emilio Lustau, son-in-law of Don José decided to move the winery to the old town of Jerez de la Frontera; With a clear exporting vocation, the winery did not cease its expansion and proof of this was that in the 70s he expanded the winery in the estate of Nuestra Señora de la Esperanza and later, with the help of Rafael Balao, he promoted quality wines, challenging the panorama of undervalued wines of little interest. A sign of distinction with respect to other wineries in the Marco was in 1988 the introduction by Emilio Lustauof the bottle with slipped shoulders to differentiate itself from other wineries.
In the early 90's the winery changed ownership and passed into the hands of Luis Caballero, S.A. which brought financial strength and capacity for commercial expansion. A decade later Emilio Lustau made an important acquisition with the purchase of six Domecq wineries that will serve as Emilio Lustau 's facilities. The last acquisition made in 2008 was extremely important in terms of brands with a hallmark within the Marco: La Ina, Botaina, Río Viejo and Viña 25, which included not only the use of the brands but also their historical soleras.
Historically, the vineyards and their classification have been of vital importance in the region and, paradoxically, have been ignored in the worst quality crises of its wines; proof of this classification is the existence of maps that catalog the different vineyards and that give greater or lesser quality to the wines produced from them. The climate influenced by the warm Levante winds and the cooler Poniente winds as well as the limestone soils, known as albariza and the singular aging in criaderas and soleras systems transmit to the Palomino Fino a unique character making its wines an example of world class, differentiated and pleasurable.
Emilio Lustau owns two vineyards in the Marco: Monteguillo within the Carrascal estate, full of albariza and from where it is supplied for the production of dry wines: manzanillas, finos, amontillados and olorosos. The second vineyard, Las Cruces, is located between Sanlúcar de Barrameda and Chipiona, with sandy soils suitable for Moscatel and Pedro Ximénez vines for the production of sweet wines.
Some of its most representative wines belong to its old soleras: Amontillado VORS, Oloroso VORS, Palo Cortado VORS or its well-known Oloroso Pata de Gallina.
