Domaine Jean-Paul & Benoît Droin is located in Chablis, in the heart of this historic French wine region. This domaine has been managed by the Droin family for almost four centuries, with Benoît Droin being the thirteenth generation of winemakers. The history of the family and the Chablis region are deeply intertwined, dating back to the 3rd and 4th centuries AD, when the first vines were cultivated in the area.
Vineyards
Jean-Paul & Benoît Droin' s vineyards are located in one of the world's most renowned wine-growing regions, characterised by its Kimmeridgian soil and semi-continental climate. This type of soil, composed of a mixture of clay and marine fossils, is what gives Chablis wines their distinctive minerality.
The domaine owns 26 hectares of vineyards, distributed in the best terroirs of Chablis. These include vineyards in the prestigious Grands Crus such as Les Clos and Valmur, and Premiers Crus such as Mont de Milieu and Vaulorent. The Chablis climate is particularly prone to spring frosts, which requires winegrowers to be constantly vigilant and employ frost protection techniques to ensure a high quality vintage.
Philosophy
Jean-Paul & Benoît Droin' s philosophy is centred on respect for the terroir and the search for the best expression of each vineyard. For Benoît, each plot has its own identity, which is reflected in the characteristics of the wine it produces. The aim is to respect the mineral diversity of the different soils, allowing the wines to express their true character without excessive intervention in the vinification.
In terms of winemaking techniques, the approach is minimalist. The aim is to accompany natural processes rather than impose them. To this end, traditional methods such as barrel fermentation and oak ageing are used, but always with an eye to preserving the freshness and mineral precision of the wines. The winery avoids the excessive use of new oak, as they firmly believe that oak should not dominate the character of the wines, but simply enhance their structure.
The leitmotiv of the project is the search for a balance between power and finesse, allowing the wines from each vineyard to express their true nature.
