The Domaine Delesvaux winery is located in France, specifically in the area of the Cotaux de la Corniche de Angevine, located between the Loire Valley and the Lyon Valley.
This winery was founded by the couple Catherine and Philippe Delesvaux in the Delesvaux estate, which was created by Philippe Delesvaux and his partner in 1978, although they separated in 1982.
Their wines are renowned throughout France and the rest of Swiss francpe for being organic, high quality, intense and very elegant. From winemaking to bottling, the passion and effort that goes into each and every one of their wines is evident.
It was Philippe's work on a farm in Anjou that gave birth to his passion for viticulture, as he learnt a few things about it, as well as learning about the management of cereal crops and animal husbandry.
Many years have passed since he made his first vinifications, and with the passing of time, the experience acquired and the love for what he does is more and more noticeable at every stage of the process, from the way the vineyards are cultivated, through the maceration process, vinification and ageing, to the bottling process. The result is wines that have gained great popularity on a large scale.
Respect for the vineyards and the land
The area where the 10 hectares on which the winery's vineyards are located is considered a UNESCO natural heritage site. Initially they practised organic farming and then converted to biodynamic farming.
Philippe's passion for mineralogy has helped him to know the soils of the area very well, which allows him to take advantage of their characteristics and conditions to grow the best grapes and obtain exquisite wines.
They even use a little volcanic sulphur in their wines, which go through different vinification and ageing processes, carried out with great care and with a specific time according to each grape variety used. And the result? Biodynamic wines with intense flavours.
Process of elaboration of their wines
No oenological products such as enzymes or yeasts are used in the production of their wines. Its founders practice biological viticulture, trying to obtain natural, organic and extremely pure wines as a result.
One of the particularities of this winery is that their wines are certified biodynamically by Demeter.
At the Domaine Delesvaux winery, they use various techniques based on biodynamic principles. For the production of some of their wines, the grapes are harvested by hand and handmade, using a slow Vaslin-type pressing and 24-hour debourbage pressing.
Vinification is gentle, and ageing is carried out in old wooden or steel barrels and takes between 6 and 12 months before bottling without fining.
