In the highly codified world of Burgundy, Frédéric Cossard bursts forth like a free wind, irreverent and deeply faithful to the land. He does not come from a dynasty of winegrowers: his story begins among dairy cows and ends in a vineyard where each vine breathes freely.
It was in 1996 that he founded Domaine de Chassorney, renting his first plots in Saint-Romain and Auxey Duresses. Gradually, he spread throughout the Côte de Beaune, but always with a clear premise: to make natural wines that are unlike any other. The result is a Burgundy without corsets, where the terroir expresses itself with clarity and emotion.
From the outset, Frédéric Cossard has been working with organic and biodynamic methods, without dogma but with a radical respect for the vine. Hand harvesting, minimal intervention and a balance between soil and vine are his way of listening to nature. Each plot, each vintage, is a different dialogue.
The cellar as an extension of the vineyard
In the cellar, Frédéric Cossard breaks with the traditional methods of the region: spontaneous fermentation, without filtering or aggressive clarification. He uses concrete eggs, amphorae or even qvevris for ageing, allowing the wine to breathe and express itself freely.
There is no "recipe" in his method, only an obsessive quest to capture the purity of the moment. As he himself says: "I don't make natural wine out of fashion, but because it is the only way for the grape to tell the truth".
A legacy that continues
In 2021, he handed over the management of Domaine de Chassorney to Aurélien Verdet, who shares his sensibility. Frédéric Cossard continues to vinify under his own name, selecting trusted grapes and applying the same philosophy. The legacy lives on, without becoming static.

Frédéric Cossard's wines are pure energy. Reds with crisp fruit, fine tannins and vibrant freshness. Whites with texture and tension. Aromas of cherry, raspberry, damp earth, wild herbs. It's all there, but without shouting. Like a landscape told in your ear.
