Champagne Guiborat is located in the heart of Cramant, a Grand Cru classified village in the Champagne region, known for the long and solid reputation of its wines.
The estate is run by Richard Fouquet and his wife Karine, who own 8 hectares of vineyards, although they actively farm only 3 hectares, leaving the rest to the Laurent Perrier Champagne Estate.Paris-born Richard took over the domaine formerly managed by his grandmother at the tender age of 18, producing his first vintage in 1996. Over the years, he has managed to consolidate the winery's reputation, focusing on the production of high quality champagnes that faithfully reflect the terroir of Cramant.
Vineyards
The Guiborat vineyards extend over the Côte des Blancs, characterised by its chalk soil from the Upper Cretaceous period, dating back 83 to 70 million years. This soil, composed of an accumulation of unicellular algal skeletons, offers a high porosity resulting in excellent water retention, ensuring a regular supply of moisture to the vines during the summer. In addition, chalk contributes to good soil drainage and possesses thermal and hygrometric regulation qualities that are ideal for wine conservation in the cellars.
The vineyards, ranging in age from 30 to 70 years, are spread over plots located in the Grand Cru classified communes of Cramant, Oiry and Chouilly, close to the Saran mountain. These unique geographical and climatic conditions are fundamental to the development of Guiborat's distinctive champagnes.
Philosophy
At Guiborat, the winemaking philosophy focuses on respect for the terroir and the pure expression of the wine. Although the winery is not certified organic, its viticultural practices are aligned with the principles of organic agriculture, avoiding the use of chemicals and opting for treatments based on herbal infusions and essential oils. Richard Fouquet only deviates from these principles under adverse weather conditions, when it is necessary to intervene to save the harvest.
Vinification is carried out by parcels, allowing the grapes from each parcel to ferment in separate tanks or barrels. However, the resulting champagnes are usually a blend of several plots, except in exceptional vintages which are made from grapes from a single plot, as is the case with Mont-Aigu champagne.
Richard and Karine Fouquet strive to produce champagnes without artifice, rarely influenced by oak, and continually seek to refine their style to achieve maximum purity. The current wines do not undergo malolactic fermentation and are classified as Extra-Brut or Brut Nature, depending on whether or not liqueur is added. These champagnes are characteristically sapid, direct and a testament to the meticulous work in the cellar.
