Azienda Agricola COS is located in the town of Vittoria, in the province of Ragusa, Sicily. This region is characterised by its African flavour, not only in the architectural ruins but also in the vegetation, with abundant olive trees, carob trees, almond trees and vineyards. The climate is reminiscent of Africa with its red, ochre and yellow tones. The town of Vittoria is situated between the rivers Ippari and Dirillo, which flow from the Hyblaean Mountains to the Mediterranean Sea.
Vineyards
The climate in the COS vineyards is milder than the traditional climate of the Ragusa hills, thanks to their higher altitude. This gives them a milder climate than that of the Hyblaean Mountains, which is decidedly Mediterranean. This particularity has greatly influenced the cultivation of certain crops in the area of Vittoria and the Comiso plateau. The area has particularly fertile soil that has been coveted by the surrounding villages for centuries. Throughout history, those who conquered these lands were fascinated by its riches and left traces of their civilisations and cultivation techniques. These ancient techniques are as old as the history of wine in the region.
Philosophy
The winery follows the principles of biodynamic agriculture based on the teachings of the philosopher Rudolf Steiner to help the vines find and maintain a balance with nature, thus allowing them to express their true character and that of their terroir. For vinification, they decided to use terracotta pots that left no traces or aromas in the wine, being completely neutral vessels. In 2000, Pithos was born, a Cerasuolo di Vittoria fermented and aged in amphorae. In 2007, the winery moved to a new location and started using only amphorae, getting rid of the barrels they had and using only 150 amphorae. Today, COS is not only associated with the success of Cerasuolo di Vittoria, but also with rigour and quality. Thanks to these three friends, the region of Cerasuolo di Vittoria was reborn and the area around Vittoria thrives with its extraordinary wines.
