Today, the brothers Olivier and Didier Gimonnet, the third generation of the family, are in charge of the vineyard and production. Both inherit their father's spirit of perfection and continue to work meticulously both in the vineyard and in the cellar. Olivier and Didier have been at the helm of production for over 30 years, applying artisanal techniques with an almost watchmaker's precision approach, which is reflected in the quality and consistency of their champagnes.
Vineyards
Pierre Gimonnet 's vineyards are located in the Côte des Blancs, one of the most prestigious regions of Champagne and home to the finest Chardonnays. The winery owns 29.40 hectares of vineyards, distributed among different villages in this region, including Cuis, Chouilly, Cramant, Oger and Vertus. These vineyards include plots of Premiers Crus and Grands Crus, such as the famous Montaigu vineyard in Chouilly, planted in 1951.
The terroir of the Côte des Blancs is unique thanks to its chalk soil, which gives Pierre Gimonnet's champagnes a lively minerality and a characteristic freshness. The approach to winemaking at Pierre Gimonnet is traditional but innovative. Great importance is given to respect for the terroir, which means that each vineyard parcel is vinified separately, allowing the different soils and microclimates to fully express themselves in the wines. They use stainless steel tanks to preserve the freshness and purity of the aromas and age their champagnes on fine lees without stirring, which adds complexity and texture to the wines.
One of the winery's hallmarks is the use of reserve wines stored in bottles, a rare technique in Champagne. These reserve wines, which come from several vintages, are added to the blends to ensure the consistency and quality of the Gimonnet style. This technique allows the champagnes to mature without losing their freshness, which is key to maintaining the vibrant, mineral character of their cuvées.
At Pierre Gimonnet, vinification is carried out with the aim of expressing the natural character of the terroir in each bottle. This is followed by careful blending, where the most suitable wines are selected for each cuvée, creating a perfect balance between freshness, minerality and complexity. This process includes the use of reserve wines from previous vintages to achieve the desired consistency in non-vintage champagnes, such as the iconic Cuis 1er Cru.
In addition, extended ageing on fine lees, without stirring, is practised in the cellar, adding a creamy texture and autolytic character to the champagnes. Bottle ageing varies according to the needs of each wine, but is always adapted to bring out the nuances of the terroir.
