It has been four generations since the Domaine Bonnardot wine cellar has shared its passion for the vine, a job done with love and the creation of incredible wines.
A history marked by the influence of the terroir since 1470.
The history of Domaine Bonnardot dates back to 1470. On a family estate in Bonnecontre, a French town and commune in the Burgundy region, where the family tradition of making excellent wine has been going on for four generations.
In 2006, brothers Ludovic and Emilien Bonnardot joined forces and took over the vineyards in the Côte and Hautes Côtes de Beaune region of Burgundy, continuing the work of their parents, Elisabeth and Christophe, and the family history.
As early as 1979, Elisabeth graduated in oenology in the Beaune district, studied with Jules Chauvet and began to practice more natural approaches in her winemaking.
Ludovic her son, after completing his oenology training, returned to his family's land since 2005 and started to convert the 15 hectares, located between Pommard and Santenay, to purely organic farming.
Ludovic is experimenting with natural winemaking with as little intervention as possible, which he has been doing since he was a teenager with grapes from an old plot belonging to his grandfather. Today he manages the winemaking on the estate and prefers not to add sulphur to his wines.
Winemaking process
The two brothers Ludovic and Emilien, after making their first four vintages on the family estate in Bonnencontre, settled in a cellar in the heart of the vineyard in Saint Aubin in the Burgundy region of France.
Their main objective is to transfer the essential characteristics of the terroir to the wine, for which it is essential to respect the vines and their soil. Therefore, they are vinifying in the most natural way possible, without sulphites or any other products.
The grapes are harvested by hand at their optimum ripening point. When they arrive at the winery, they are carefully selected on the table.
No selected yeasts or enzymes are used in the process of creating their unique wines with character and personality. The fermentation of the wines is natural and spontaneous, with autochthonous yeasts, without added sulphur or any oenological product.
