Crianza white wine is a category for white wines that at some point in the winemaking process have been in contact with wood or have been in contact with the lees from the dead yeasts and in contact with the wine.
Three methods can be distinguished to obtain aged whites: the alcoholic fermentation of the must takes place in wooden tanks; the aging of the wine in oak barrels or vats; and the aging in stainless steel tanks or barrels with the contribution of the fine lees generated by the autolysis of the yeasts. In this last process, the lees are removed by battonage or periodic pumping over to homogenize the medium and protect it from oxidation.
The purpose of the aging process is to stabilize the wine, provide the wine with unctuousness, protect the wine from oxidation and the appearance of tertiary aromas typical of aging.
Within the wide range of white varieties, there are certain varietals such as Chardonnay, Viognier, Godello, Semillon and Doña Blanca which, due to their genetic characteristics, are grateful to be aged in wood or on lees. Often the reason is that they are varieties that need the benefits of a micro-oxygenation provided by aging in which the tannins are polished by polymerization.
The most subtle examples of aging in whites are found in Burgundy where the vignerons master the use of wood for Chardonnay wine with absolute mastery.
