Description
Vincent Girardin, son of Meursault winegrowers for more than eleven generations, founded his own maison at the age of 19, determined to give voice to the best terroirs of the Côte de Beaune from a purer, less interventionist perspective. His approach: to let the land speak, with no make-up,respectful viticulture and precise but restrained winemaking.
Vincent Girardin Volnay 1er Cru Les Santenots comes from Pinot Noir vines more than 85 years old, on clay-limestone soils with red clays south of Meursault. Although planted in this village, the grapes give origin to Volnay if vinified in red, reflecting the uniqueness of this climat which combines the delicacy of Volnay with the structural richness of Meursault. It is a gently sloping site, well exposed, where the deep roots drink from a complex and lively geology.
Winemaking
Vincent Girardin Volnay 1er Cru Les Santenots is harvested by hand with careful selection in the field and on the table, and occasional use of optical triage. Part of the grapes are vatted with whole bunches of grapes after a light crushing. Fermentation in stainless steel tanks is preceded by cold maceration. During this process, pumping over and gentle punching down alternate. After pressing, the wine spends 15 months in French oak barrels (30% new), where it also undergoes malolactic fermentation. Blending is done just before bottling, without fining and with minimal filtration.
Taste
Vincent Girardin Volnay 1er Cru Les Santenots presents itself on the nose with black cherries, ripe raspberries and a subtle veil of cinnamon and clove. With air, notes of dried leaves, damp earth and dark petals emerge. The palate is full and silky, with perfectly integrated tannins. Fresh acidity supports the whole, while an earthy minerality runs through. Long, spicy and elegant finish. A Volnay of depth and restrained nobility.
