Paul Girard, a young winemaker full of passion and vision, is the architect behind the revitalisation of this winery. Born in 1995, Paul is no stranger to the world of wine. He grew up among vineyards, feeling the earth between his toes and learning the secrets of vine cultivation from his ancestors. His formal education in viticulture and oenology in Avize, complemented by a double master's degree in Wine Management and Business in Bordeaux, gave him a solid foundation to take on the family legacy. In 2018, he made the bold decision to return home and merge the estates of his father, Philippe Girard, in Les Mesnil, with those of his mother, Dominique Bonnet, in Oger. The result is an impressive 12-hectare vineyard split evenly between Oger and Les Mesnil, two of the most prestigious Chardonnay Grand Crus in the world.
The winery's history is rich and complex. Girard-Bonnet's roots go back to two powerful winemaking families who have been present in the region for decades. Philippe Girard, of the Girard domaine, continued the family tradition that had been established at the end of the 20th century. On the other hand, Dominique Bonnet belonged to the Bonnet estate, which in the 1980s produced around 140,000 bottles under the name Champagne F. Bonnet Père et Fils. However, fate intervened in 1988 when the Bonnet estate became extinct and its vineyards were leased. It was the expiration of this lease that allowed Paul Girard to merge the two vineyards, giving life to the Girard-Bonnet brand in honour of his family roots and traditions.

The Girard-Bonnet vineyards are a marvel to behold. Spread over 12 hectares of fertile land, they are mainly located on the Côte des Blancs, in Mesnil-sur-Oger and Oger. These regions are world famous for producing high quality Chardonnays, and the Girard-Bonnet vineyards are no exception. With vines averaging 50 years old, and some that have stood the test of time for a century, these vineyards are a testament to the dedication and care with which they have been cultivated over the years.
Under the watchful eye and direction of Philippe Girard, the winery made a conscious decision to eliminate the use of herbicides from the 2000s onwards. This decision not only reflects a commitment to sustainability and care for the environment, but also to producing wines of the highest quality. Each vine in the Girard-Bonnet vineyards receives individualised attention, as each has specific needs based on its age, location and exposure to the sun.

Girard-Bonnet's philosophy focuses on the harmony between the land and the vine. Paul Girard, with his modern vision, has initiated the conversion of the vineyards to organic and biodynamic viticulture practices. This transition, which will culminate in certification in 2023, is a testament to the winery's commitment to sustainable and ethical production.
Winemaking is a sacred process at Girard-Bonnet. The winery firmly believes that good wine begins with healthy grapes. Therefore, grapes from specific terroirs are pressed separately to preserve their unique character. They then undergo a natural fermentation process that respects the essence of the grape. Paul Girard, with his innovative approach, continues to explore different techniques and containers, from stainless steel tanks to amphorae, to achieve the purest expression of terroir.
