The winery was founded in 1875 by Dr. Robert Weil, who initially acquired vineyards in the Kiedrich hills in 1867. Before settling in Kiedrich, Weil was a professor of German at the Sorbonne University in Paris, but had to leave France due to the Franco-Prussian war of 1870-71.
The winery has been run by several generations of the Weil family, with Wilhelm Weil, the great-grandson of the founder, currently at the helm. Wilhelm Weil joined the winery in 1987 and has carried on his family's tradition, making visionary investments in both the winery and vineyards and maintaining the focus on producing high quality wines.
Vineyards
The Robert Weil winery cultivates 90 hectares of vineyards, all dedicated exclusively to Riesling. The vineyards are located in the Kiedrich hills, specifically in the Kiedrich Turmberg and Kiedrich Gräfenberg plots, which are recognised as some of the best in the Rheingau region. These plots are located on a southwest-facing slope and on a steep cliff with slopes of up to 60%.
The soil of these vineyards is deep and stony, composed mainly of fragmented phyllites mixed with loess and silt. This combination of nutrient-poor soils, an ideal microclimate, steep slopes and optimal sun exposure allows the grapes to ripen slowly, resulting in complex, mineral-rich wines with great elegance and finesse.
The vineyards are farmed organically, using organic fertilisers as necessary and planting green cover in alternating rows to optimise the humus content of the soil. No herbicides are used and other protective measures are employed sparingly and with respect for the habitat. Harvesting is done by hand, with up to 17 selective passes through the vineyards, ensuring that only the most pristine and perfectly ripe grapes are used in wine production.

Fermentation is closely monitored and temperature controlled, extending from six to twelve weeks. Whenever fruit conditions allow, wild yeasts are used, producing wines of greater authenticity and a distinctive profile that clearly reflects their origin.
In terms of ageing, dry and full-bodied wines are fermented and matured in oak barrels, where micro-oxidation can provide greater structural complexity. On the other hand, lighter, fruitier and naturally sweet wines are fermented in stainless steel, which gives them greater finesse and allows them to develop optimal elegance.
Finally, the wines are filtered and bottled using a fast but gentle process that preserves as much of the primary fruit aromas as possible. The wines then undergo a period of bottle maturation before release, ensuring that they reach their full potential in terms of flavour and aroma.
