Samuel Boulay is the man behind the natural wine cellar that bears his name. Although he is originally from the Loire, in 2013 he moved to the Ardèche area, specifically to Les Salèlles, a small village on the banks of the river Ibie. The reason for his move was to take over some of Gilles Azzoni's vineyards.
Samuel Boulay's vineyard
Its terroir conveys a gentle and discreet character, in the image of its faithful creator. He owns five hectares of old vineyards, full of life, some right next to his house, others by the river, and on the other side of the tree-filled hills. In the spirit of organic farming, Samuel does not cut the grass between the rows. He works his vines with homeopathic treatments and always follows the lunar calendar. He harvests the varieties roussanne, viognier, merlot, syrah, garnacha and alicante, something that makes him stand out from other winegrowers in the region. He does not use electricity, as he believes that the grapes that come into contact with it alter the fruit. For this reason, he also avoids using an electric press. He does everything by hand: a profound, determined and penetrating technique.
Samuel Boulay's wines
His wines are pure. In the cellar, they are aged in old oak barrels for one or two years and are never refilled. They are labelled by hand and bottled by gravity without additives, fining or filtering. Among the highlights we can find the captivating Samuel Boulay Rappapéo 2016, a non-crianza white viognier/ roussanne blend, ideal for a romantic dinner. Also, the young red Samuel Boulay Spigao 2016, a powerful and structured Cabernet Sauvignon and Merlot. Its Samuel Boulay Fricheti 2016 bottle, as geeky as it is natural, is the perfect blend of Alicante, Grenache, Merlot, Roussanne and Viognier. It is a young, deep and complex red wine, ideal as a gift for a special someone. The grapes are spontaneously fermented with indigenous yeasts and the entire harvest is carried out without destemming. Its perfect pairings are red meats, white meats, stews and casseroles. All the wines are bottled unclarified, unfiltered and without added sulphites.- ;
