The Vodopivec winery is located in the Friuli Venezia Giulia region, specifically in Colludrozza, near Trieste, Italy. Founded in 1997, the Vodopivec family has been farming in the Carso district of Trieste for generations. However, it was in that year that brothers Paolo and Valter Vodopivec began large-scale production and bottling as a winery. Although they have experimented with other varieties in the past, they are convinced that Vitovska, the indigenous grape of this area, is the true voice of the Carso, and they work exclusively with it.
The current vigneron, Paolo Vodopivec, is known for his unwavering commitment to viticulture and winemaking, always challenging and unafraid to take risks. His personality and appearance are emblematic of his uncompromising approach and total dedication to the winemaking process.Vineyards
The Vodopivec vineyard area covers 6 hectares. The Carso is a limestone plateau with little soil. Paolo, in his dedication, removed the top layer of soil, crushed the base rocks with tools similar to a rock drill to turn them into stones, and then returned the removed soil. In this way, he transformed the land into a vineyard by himself. The area is famous for its reddish-coloured soil known as Terra Rossa, a rocky limestone soil rich in marine sediments. This soil stone is the soul of the Vitovska.
Philosophy
Vodopivec focuses on making wines that reflect the true essence of the Karst. Paolo and Valter believe in using natural and sustainable techniques. They only use fully mature compost based on manure from Carso-raised cattle and farm only with products based on natural materials such as algae, minerals and soil, without using pesticides. In 2009, Paolo started the construction of a new winery. The walls are made of bare Carso rock, and cement is only used on the roof. The cellar, which Paolo built almost by himself, shows the greatest respect for the wine and is like a temple for him. As for vinification, Paolo uses clay amphorae for ageing the wines. Initially they used Spanish amphorae, but after visiting Georgia, they decided to switch to amphorae produced in that region. These terracotta amphorae are buried in their cellar, where the temperature is constant, helping their wines to mature in ideal conditions.
