Samuel Cano is the fourth generation of winemakers in his family. In spite of his young age, he is one of the great references of natural wines in Spain, specifically in Mota del Cuervo, a rural area of Castilla La Mancha.
Samuel Cano's vineyard
This producer grows all his grapes in 35 hectares of vineyards, which have been inherited from his grandfather. His land, with chalky clay soil over limestone, is 700-800 metres above sea level. Although it is a large area, Samuel only uses 10% of the grapes for his own production. The rest he sells at a low price to the local organic cooperative. Not all the grapes are dry-farmed, some are irrigated. Both his family and himself have always been interested in organic methods of cultivation and winemaking.That is why he combines biodynamics, science, some agricultural technology and common sense. He prefers to see and work from the sustainable side of the field. Instead of using sulphur to spray his vines, he chooses a cow's milk solution to protect them against fungus and mould. He harvests all grapes by hand. Samuel is a living synonym for quality over quantity.
Samuel Cano wines
These are 100% naturally voluptuous and mineral wines. We can taste his friki orange wine Aire Salvaje 2017, a white airén with crianza, special for a dinner with friends. Its alcoholic fermentation is spontaneous with indigenous yeasts in chestnut barrels and maceration of skins as its ageing, under flor veil. Atardecer en el Patio 2018 is rosé, with red velasco grapes, fruity and vibrant. Ideal to drink as an aperitif with Iberian cured meats as a pairing. Their non-crianza white airén, Aire en el Patio La Tarancona 2018, is macerated on skins for 9 months. All their wines are bottled unclarified, unfiltered and without added sulphur.- ;
