The Domaine Hubert Lamy is an organic wine cellar that the Lamy family has been working in Burgundy since 1640, and which today is under the management of Olivier Lamy. Today, they have more than 18 hectares of vineyards, 85% of which are Chardonnay and 15% Pinot Noir.

The Lamy family has been working the vineyards of Saint-Aubin in Burgundy since 1640. Today, it has 18.5 hectares covering 20 appellations, spread over the appellations of Saint-Aubin, Puligny-Montrachet, Chassagne-Montrachet and Santenay. These villages of the Côte de Beaune are renowned for both their white and red wines.
The soils are essentially clay-limestone, light, shallow and stony. Organic products are used for cultivation and the grapes are harvested by hand. Moreover, each plot is vinified and matured separately so that each wine can preserve the character of its terroir.
Domaine Hubert Lamy wines
Domaine Hubert Lamy produces around 100,000 bottles per year, which it markets in some 33 countries around the world. Of these 18.5 hectares, 85% are devoted to the Chardonnay grape variety, while 15% to the Pinot Noir grape.
The white Chardonnay grapes are pressed slowly with little sedimentation, and then put into barrels where they ferment at a controlled temperature with natural yeasts. Very low levels of sulphites are used and the wine is bottled after 24 months of ageing.
The most outstanding Chardonnay wines are the aged white wines Hubert Lamy Saint-Aubin 1er Cru En Remilly 2015 and Hubert Lamy Saint-Aubin 1er Cru Derrière chez Edouard 2018, both with a quality seal of over 90 Parker Points.
As for the Pinot Noir, the grapes are selected and then undergo a maceration of about 15 days. The wines are then placed in barrels to undergo an ageing process of between one and ten years.
