Description
Fanny Sabre Meursault Limozin is a dry white wine from the Burgundy region of France, made from organically grown Chardonnay grapes. This cuvée comes from a vineyard located on a clay and gravel soil, with excellent exposure and drainage.
Winemaking
The grapes, from vines over 50 years old, are harvested by hand and fermented spontaneously in oak barrels. Ageing takes place for 14 months in large barrels and casks. The annual production is limited, with only around 1000 bottles per year, making it an exclusive and coveted wine. Fanny Sabre, who took control of the domaine in 2005, uses natural winemaking practices, without herbicides and with natural treatments, learned under the tutelage of Philippe Pacalet.
Taste
Fanny Sabre Meursault Limozin is distinguished by its elegant and precise flavour, with intense notes of citrus, apple, white flowers, minerals and a hint of freshly made butter and toasted pine nuts. On the palate, it is fresh and clean, with a chalky minerality that gives it a long finish. The well-balanced acidity and complex flavours make this wine an excellent choice both for drinking now and for cellaring, where it can develop for decades. Pairing is recommended with lobster, crayfish and grilled or stewed fish, especially when accompanied by butter-based sauces.
