Description
Fanny Sabre Bourgogne Blanc is a white wine made from 100% Chardonnay. The grapes come from vineyards located in the communes of Meursault, Puligny-Montrachet and Chassagne-Montrachet in the Burgundy region of France. Production follows biodynamic viticulture techniques, with very low yields of approximately 35 hectolitres per hectare to obtain very concentrated grapes.
Winemaking
Fermentation takes place spontaneously in oak barrels and malolactic fermentation is only partially carried out to preserve good acidity in the wine. Ageing lasts 10 to 12 months in used oak barrels. This meticulous approach guarantees the authenticity and precision of the wine, allowing the characteristics of the terroir to be fully expressed.
Taste
Fanny Sabre Bourgogne Blanc stands out for its freshness and elegance. On the nose, it presents aromas of green apple, citrus fruits such as grapefruit, white flowers and a slight mineral note. On the palate, it is tense and savoury, with good concentration balanced by a marked acidity. The fruity sensations are complemented by hints of aromatic herbs such as thyme and sage. It is a very vertical and saline wine, typical of Burgundy Chardonnay, with a long aromatic persistence. This wine is versatile and can accompany a wide variety of foods, from appetizers to white meat dishes.
