Description
Fanny Sabre Volnay 1er Cru Les Mitans is an exquisite red wine from the Burgundy region of France, made primarily from Pinot Noir grapes. This Premier Cru vineyard is located in the commune of Volnay, characterised by its deep soil with limestone pebbles, which contributes significantly to the character of the wine.
Winemaking
The grapes are harvested by hand and undergo maceration in stainless steel tanks for 4 to 5 days, followed by natural fermentation with indigenous yeasts in oak barrels for 15 days. The ageing process takes place in recent oak barrels for 15 to 18 months. Fanny Sabre, a young winemaker who uses organic and low-intervention methods, runs this small winery with meticulous attention to detail.
Taste
Fanny Sabre Volnay 1er Cru Les Mitans is a rich and complex experience. It has a full, creamy texture, with aromas that include white flowers, citrus fruits and hazelnuts, as well as a touch of minerality. On the palate, notes of ripe peach, apricot and a subtle hint of vanilla are prominent, culminating in a long, elegant finish. The tannins are delicate and refined, contributing to the wine's structure and liveliness, a hallmark of Fanny Sabre wines. This wine is best served at a temperature between 14°C and 16°C and pairs excellently with red meats, pasta, hard cheeses and stews.
