Winemaking
Fanny Sabre, known for her natural and biodynamic approach to viticulture, carries out the vinification by hand, with fermentations on indigenous yeasts and minimal addition of sulphur to preserve the authenticity of the wine. Ageing takes place in oak barrels of various vintages for 12 months, which adds complexity without dominating the aromatic profile with notes of new wood.
