Description
Fanny Sabre Beaune 1er Cru is a jewel of Burgundy, made exclusively from Pinot Noir. The Fanny Sabre vineyard, located in Pommard, covers only 4.5 hectares, and produces a dozen different cuvées in very limited quantities. Fanny Sabre took over the management of the domaine after the death of her father, with the initial support of Philippe Pacalet, a renowned pioneer of natural wine.
Winemaking
Cultivation methods are entirely organic, and fermentation is carried out with indigenous yeasts, using concrete and wooden vats. Vinification is natural, with no chaptalisation unless absolutely necessary. Maceration takes place in stainless steel tanks for 4 to 5 days, followed by natural fermentation in oak barrels for 15 days. Ageing takes between 15 and 18 months in oak barrels.
Taste
Fanny Sabre Beaune 1er Cru stands out for its velvety texture and impressive purity. The nose offers aromas of perfumed dried flowers, ripe strawberries, wild cherries and a touch of white pepper. On the palate, bright, crunchy red fruits are accompanied by stony minerals and notes of sweet vanilla and earth. This wine has a spicy and persistent finish, with a complexity that develops with each sip. It is a delicate and elegant wine, with a powerful and attractive underlying structure, typical of Fanny Sabre wines.
