Description
In the cool highlands of Burgundy, David Duband has forged an identity based on absolute respect for the vineyard. At the helm of a family-run domaine founded in 1965, he decided in 1991 to start producing his own wines, moving away from selling grapes to pursue a more personal interpretation of the terroir. It was a bold decision that defined the estate’s style: meticulous work, organic cultivation and a constant quest for purity. David Duband Bourgogne Hautes Côtes de Nuits Blanc is made from Chardonnay grapes grown on vines around 40 years old, situated on limestone and marl soils within a cooler, windier climate that lends the wine tension, clarity and a particularly elegant expression of the Burgundian landscape.
Production
The grapes for David Duband Bourgogne Hautes Côtes de Nuits Blanc are harvested by hand and undergo meticulous sorting before pressing. After racking, the must ferments in barrels with indigenous yeasts, following a philosophy of minimal intervention that is strongly focused on the authenticity of the terroir. The wine is aged for 10 months in French oak barrels, comprising 20 per cent new oak and 80 per cent barrels that have previously held between one and five vintages. As a result, the oak does not dominate but rather complements the wine, adding texture and depth. Bottling preserves the balance between freshness, body and minerality in this Burgundy white wine.
Taste
David Duband Bourgogne Hautes Côtes de Nuits Blanc opens with a fresh and precise nose, revealing yellow fruit, pear, ripe apple and delicate notes of hazelnut. This is followed by hints of citrus, dried flowers and a subtle chalky sensation that defines its character. On the palate, it displays an enveloping, almost creamy texture, yet is always underpinned by fine acidity and a pronounced mineral character. The finish is long, elegant and serene, with that combination of breadth, freshness and tension that makes the wine particularly food-friendly and refined.
