Description
David Duband Coteaux Bourguignons Blanc is the result of the discerning and sensitive vision of one of Burgundy’s finest winemakers. In a region where the hierarchy of the crus dictates almost everything, Duband took a bold decision: to treat a wine from a more modest appellation with the same seriousness, the same respect for the land and the same exacting standards in the cellar as his most prestigious labels. This approach to the vineyard defines the character of this white wine, sourced from plots around 30 years old planted on clay-limestone soils, with a north-easterly aspect and organically farmed. Here, the terroir does not seek exuberance, but rather tension, precision and a pure expression of the Burgundian landscape. Made from Chardonnay, this Coteaux Bourguignons Blanc clearly conveys the fresh, mineral identity of its origin.
Production
For David Duband’s Coteaux Bourguignons Blanc, the grapes are harvested by hand to preserve the integrity of the fruit straight from the vine. Once in the winery, the grapes are gently pressed and the must is clarified before fermenting with indigenous yeasts – an essential aspect of David Duband’s philosophy, as it allows the personality of the vintage and the terroir to be preserved. The wine is aged for 10 months in French oak barrels that have been used between one and five times, with a small proportion of new oak. This ageing process is not intended to dominate the wine, but rather to complement it, adding texture, depth and a very subtle spicy nuance before bottling.
Taste
On the nose, David Duband Coteaux Bourguignons Blanc is elegant and restrained, with notes of peach, apricot, ripe white fruit, dry hay and a delicate undertone of almond and subtle toasty notes. On the palate, it displays a creamy texture, yet is always underpinned by a lively freshness that lends it vigour and length.
