Description

David Duband belongs to that rare breed of winegrowers who do not view wine as a routine, but as a statement of intent. When he began bottling his own wine rather than selling the grapes, he was choosing to give his terroir a voice of its own. Since then, his journey has been characterised by organic viticulture, meticulous soil management and a very Burgundian—yet increasingly rare—philosophy: wine should taste of the place where it is born, not of the cellar’s artifice. David Duband Nuits Saint Georges, made from Pinot Noir grown on old vines, comes from one of the most distinguished communes of the Côte de Nuits, on calcareous and marly soils, in a continental climate that imparts tension, depth and that blend of fragrance and austerity which distinguishes Burgundy wines of true pedigree.

Winemaking

The winemaking process for David Duband Nuits Saint Georges is designed to preserve that identity without diluting it. The grapes are harvested by hand, followed by rigorous selection, and around 60 per cent of the bunches are fermented whole—a crucial aspect of the estate’s style, as it imparts depth, inner freshness and more vibrant tannins. Maceration lasts around 11 days, with measured punching down and pumping over, aiming to extract with precision rather than force. The wine then spends 13 months in oak barrels, with a moderate proportion of new oak – enough to provide structure, but never to impart excessive oak notes. Finally, it rests in tanks and is bottled unfiltered and unclarified. Everything here exudes restraint, patience and respect for the raw material.

Taste

On the nose, David Duband Nuits Saint Georges does not shout, but it captivates. It opens with crisp red fruitredcurrant, delicate strawberry and a hint of blackberry – and is soon followed by violets, white pepper and a very delicate earthy undertone, almost like light undergrowth. On the palate, it offers that highly appealing combination of softness and tension. The tannins are present, but they are fine, straightforward and refined. The fruit returns, enveloped in a floral and spicy tapestry, whilst the chalky backbone keeps the wine upright, precise and long on the palate. This is not a red wine that makes an immediate impact, but one of serene class and noble austerity—the sort that seduces through its detail, texture and persistence.
