David Duband stems from a distinctly Burgundian vision of wine: precision, respect for the land and a constant quest for purity. From his winery in Chevannes, David Duband practises certified organic viticulture, tending old vines with meticulous attention to the soil and the vine’s natural balance. David Duband Bourgogne Hautes Côtes de Nuits Louis Auguste, made exclusively from Pinot Noir, reflects the character of the Hautes Côtes de Nuits, a high-altitude area within the Bourgogne Hautes Côtes de Nuits where the limestone and marl soils, combined with a cool climate, favour wines that are taut, fragrant and highly elegant. Duband’s philosophy has always been bold: to intervene as little as possible so that the vineyard can express itself more clearly.
Winemaking
The grapes are harvested by hand and brought to the winery following careful selection. In David Duband Bourgogne Hautes Côtes de Nuits Louis Auguste, a significant proportion of the bunches are vinified whole, contributing complexity, depth and a very refined spicy profile. Fermentation is accompanied by gentle extractions, prioritising delicacy over power. The wine is then transferred to barrels for 13 months’ ageing, with a small proportion of new oak, followed by further refinement in tanks before bottling. The wine is bottled without fining or filtering, thus preserving its full character.
Taste
In the glass, David Duband Bourgogne Hautes Côtes de Nuits Louis Auguste offers a pure, floral and vibrant profile. Notes of cherry, raspberry and redcurrant emerge, enveloped in violets, delicate spices and a subtle herbal undertone. On the palate, it displays a silky texture, delicate tannins and a freshness that envelops the entire palate. The red fruit remains distinct, underpinned by precise acidity and a very Burgundian chalky backbone. The finish is long, fresh and elegant. A refined, expressive Burgundy red wine that is very true to its origins.
