From the same vineyard as the Tres Cortados in Trebujena comes the NV PX Veracruz, a very old, concentrated sweet and ripe wine. It has a nose of carob beans, dates, licorice and dark chocolate, roasted and toasty and with a dense and thick texture like motor oil. It has only 14% alcohol and over 500 grams of sugar. 900 half bottles were produced.

Sourced from old vineyards in Trebujena, this Pedro Ximénez wine was aged for many years in static ageing -with no sacas or decantations- in a single cask that conserved just 80 litres of its foundations.
Description
In Trebujena, where the Atlantic cools the light and the sun concentrates everything, Willy Pérez and Ramiro Ibáñez have been doing something unusual for years: recovering vineyards, vineyards and wines as if they were rescuing lost documents. La Riva PX Veracruz was born from a brave and not very "commercial" decision: not to domesticate an old find, not to blend it or polish it, but to bottle it as a testimony. It comes from the now defunct Veracruz winery and from a place in Trebujena where Pedro Ximénez was almost a local rarity, more linked to family sweets than to market labels. Here the variety is clear and uncompromising: 100% Pedro Ximénez, and the origin -Cádiz, Marco de Jerez- provides that unrepeatable blend of salty breeze, sustained heat and oxidative tradition that turns time into an ingredient.
Elaboration
De La Riva PX Veracruz is not a "recipe" PX, but a very old wine, aged for very long periods in static conditions, without sacas or decantations, as if the cask had been a sealed capsule. It rested in a single butt, born of a minimal volume, which explains its almost supernatural concentration. De La Riva PX Veracruz is bottled in 37.5cl format, with 14% vol., in tiny quantities: literally a few hundred half-bottles, more relic than product.
Taste
Riva PX Veracruz has a dark mahogany, almost ebony colour, with a slow tear. The nose is a compact block of carob, dates, noble raisin, liquorice and dark chocolate, with a toasted register of coffee and cured wood. The texture is impressive on the palate: dense, unctuous, "oily", but without the weight of alcohol. The sweetness is enormous, ripe and deep; it enters with dark toffee and raisined fruit, and opens up towards bitter cocoa, roasted notes and a very long finish where date, chocolate and that echo of liquorice that sticks to the palate return. A wine for small sips and long silences: more of an experience than a dessert.
