Description
La Riva Matalian is a wine made from the processing of Palomino Fino grapes from the Matalian vineyard. These vineyards are composed of concentrated soils that are perfectly balanced with the cool climate and intense winds of this area, which converge to produce high quality fruit.
The grapes harvested in this plot are mainly destined for the production of fine wines, with long organic ageing under the veil of flor.
Winemaking
The production of La Riva Matalián wine begins with the cultivation of the fruit, ensuring that at each stage the artisanal techniques are applied that follow the philosophy of this winery, since its ancestors.
The grapes are harvested by hand to guarantee the optimal ripening of the fruit. Another particularity in the production of this wine is that the bunches of grapes are not destemmed for processing, but are taken to a whole bunch pressing stage.
Fermentation is carried out in 500-litre barrels at room temperature, using velo de flor as the yeast, as in the ageing process, which is subjected to a period of 12 months.
Taste
La Riva Matalián wine has a peculiar golden colour, which makes it look clean and bright. Its aromatic nuances lean towards the presence of citric fruits, flowers and slight herbaceous touches. On the palate it becomes fresh, with an accentuated acidity and long-lasting saline and mineral tones .
