Description
The wine La Riva La Cave is a white wine, product of the processing of 100% palomino fino grapes, cultivated under artisan techniques that procure the natural expression of the taste and aroma of the fruit.
It is classified as a hot and unique wine, considered also as one of the most interesting examples in Spain, as it came from the winery where the most sought after and acclaimed sherry was produced.
Elaboration
The La Riva La Cave wine follows the same process as other wines from this winery, where the fruit is treated by hand to ensure that it has reached optimum ripeness.
After the harvest, the grapes are pressed whole bunch, that is to say, without being destemmed, in order to extract the must and then fermented in 500-litre barrels, using the velo de flor yeast.
This last process is carried out at room temperature, in order to favour fermentation conditions, and so that the fruit can express itself without the intervention of foreign elements that alter its flavour and aroma.
Finally, the wine is aged for 12 months under the veil of flor, using sherry casks for this process.
Taste
La Riva La Cave wine denotes the presence of dried fruit aromas combined with white flowers. When you taste it, you will notice that it is a dry wine, which at the beginning can become fresh and light, but at the end with a bitter touch.
A deep wine with minerality
The wine La Riva La Cave is defined as a deep wine, as it has diverse tonalities in its flavour, which does not allow you to identify the nuances, but the layers of flavour converge in a single one. It is a good alternative to accompany meats and white fish.
