Description
Karnage Kolombour is one of the wines in the extensive collection of the project between Charles Dagand and Stéphane Planche in Jura. The varieties involved in Kolombour are: 50% Colombard and 50% Bourboulenc grapes, both from Adissan in the department of l'Hérault.
Winemaking
The Colombard grapes were vinified in two tanks: one with whole bunches and the other destemmed. Both tanks were filled with the must obtained from the direct pressing of the Bourboulenc, with a maceration period of approximately 7 days. They were then pressed and kept separate in their respective tanks until spring. Finally, they were blended and, after another three months in tank, they were bottled in July. The total production amounted to 1,800 bottles and, as a distinctive detail, no sulphites were added to the wine.
Taste
Karnage Kolombour is a deep expression, with citrus and savoury notes. Flavours of preserved lemon, green bitters and hay can be perceived, making it refreshing and easy to drink. There are also hints of candied citrus peel, white peach and a light green apple acidity. It is a light and simple wine, but not lacking in complexity.
