Winemaking
Semi-carbonic maceration and then fermented with indigenous yeasts in fibre tanks. Bottled unfined, unfiltered and without added sulphites.
Description
Karnage Plouk Rouge is made from 100% Ploussard de Pupillin grapes, specifically from the "La Rouge" plot in the Jura region, by Charles Dagand and Stéphane Planche.
Winemaking
The grapes are 50% destemmed and 50% whole bunches. Spontaneous fermentation with indigenous yeasts takes place during the following three weeks of maceration in fibre tanks, without breaking or pumping over the grapes. This process guarantees an easy and fast fermentation. After its elaboration, the wine was bottled in November without added sulphites, resulting in a limited production of 1,100 bottles.
Taste
Karnage Plouk Rouge is a perfect interpretation of the word "glouglou", which evokes the sensation of a light, smooth, easy-drinking wine. Its fresh notes of pink grapefruit and forest strawberry make it a real refreshment for the palate. At first, its aroma may open with a strong reduction reminiscent of the smell of wet socks, but over time it clears up, offering delicious notes of fresh geranium, grapefruit, forest strawberry and black olive.
