The Garnacha and Garnacha Gris ferment in fibre tanks with 50% whole bunches and the Garnacha Blanca ferments (50% with skins) separately in fibre tanks with a total of 10 days of skin soaking. Pressed and blended in stainless steel tanks. Bottled without added sulphites.
Description
The Karnage Kube wine is another rarity between Charles Dagand and Stéphane Planche, two wine enthusiasts from the Jura region. The composition of this wine is a reflection of the diversity and richness of the grape varieties of the Languedoc-Roussillon region: Grenache Gris (40%), Grenache Noir (40%) and Grenache Blanc (20%).
Winemaking
The Grenache Noir grapes are directly pressed, while the Grenache Gris undergoes a whole-cluster maceration for 10 days. On the other hand, the Garnacha Blanca is divided in two: half is pressed and the other half is macerated in its own juice. Finally, everything is pressed and blended in a stainless steel tank, where it is blended for 4 months before bottling in December. This wine is produced without added sulphites, which makes it a natural and pure choice.
Taste
Karnage Kube is a blend of red and white(orange wine), super aromatic with notes of yellow fruits, spring flowers, apples and citrus. On the palate, you can perceive flavours of ripe peaches and a variety of citrus fruits. It is an unstable wine without sulphur and is on the verge of "goût de souris", but remains a lively and charming potion. It is a natural orange wine of great quality with a touch of funk. It is recommended to pair with oysters because of its balance between sweetness and dryness.
