The 2023 A Graña comes from a vineyard in the parish of Adina, and it has a different personality, not only because of its lower alcohol level (11.7%), contained ripeness and higher acidity but because it fermented and matured in a chestnut barrel (and 200 liters in stainless steel), kept with lees for nine months. The nose has a different profile, spicy and with notes of ... chestnut flowers?, with a slightly wild/rustic edge that I love. The palate is bright and vibrant, with effervescent acidity that makes you salivate. This is a collaboration with Jos-e Manuel Domínguez and Adrián Guerra with grapes from the Xesteiriña vineyard. 1,256 bottles and 13 magnums produced. It was bottled in May 2024.

Fermented with indigenous yeasts under controlled temperature in chestnut barrels of 200 and 800 litres. Aged on lees for 9 months. Bottled without tartaric stabilization, unfined and lightly filtered.
