Joseph Drouhin Chablis Grand Cru Vaudésir was born on one of the most "musical" slopes in Chablis: Vaudésir is a natural amphitheatre, with slopes that capture the light from two exposures (Southwest and Southwest) and return it in a slow, unhurried maturity. Here, in the 1960s, when many Chablis vineyards were languishing, Robert Drouhin made an unpopular decision: to invest in this corner with almost obstinate faith, convinced that greatness is not always visible at first sight. This courage - more intuition than calculation - defines the philosophy of the house: precision, respect for the origin and a constant search for purity. The wine is 100% Chardonnay, but the character is marked by the site: Kimmeridgiense limestone with marine fossils, that "ancient sea dust" that signs the style of Chablis Grand Cru with salinity, mineral tension and austere elegance.

Winemaking

At Joseph Drouhin Chablis Grand Cru Vaudésir, the grapes are harvested by hand, in aerated crates, taking care that the grapes arrive intact. In the cellar, the work is surgical: slow pressing of whole bunches in a pneumatic press; the must at the end of the pressing is separated from the free-run juice to preserve the finesse. After a light racking, the must is fermented and aged in used 500-litre barrels (without new wood), seeking depth without make-up. Ageing lasts 12 to 15 months, refining the wine calmly, guided by tasting and analysis until bottling. The aim is not to "mark" the wine, but to let the terroir speak with its own voice: Chardonnay from Chablis in its most precise, vertical and gastronomic register.

Taste

In Joseph Drouhin Chablis Grand Cru Vaudésir, the first sensation in the glass is one of cool light: crisp citrus (lemon, lime), white apple and a trace of discreet flower, all underpinned by a flinty, crushed stone minerality. This is not an exuberant Chardonnay: it is a wine of taut lines, restrained, almost austere at first. With air, more enveloping nuances appear - a touch of fine honey, soft cream - always in the background, without stealing the limelight from the rock. Straight and dry on the palate, with sharp acidity and a texture that broadens in the middle: Grand Cru for depth, Chablis for nerve. The finish is long, saline and vibrant: elegant bitter citrus, wet stone, and a persistence that doesn't scream... but lingers.
