Description
Joseph Drouhin Petit Chablis is born from the meticulous spirit of Maison Drouhin, one of the historic Burgundy houses that has defended, generation after generation, the idea that greatness is not dictated by a label, but by fidelity to the origin. This wine is the result of a decision as simple as it is courageous: to make a Petit Chablis that is not "lesser", but a pure and honest reading of the coolest and most luminous Chablis landscape. In the years when many were looking for volume and wood, Drouhin opted for precision: harvesting with freshness, protecting the fruit and letting the soil do the talking. Made from 100% Chardonnay, it comes from vines located on the highest plateaus of the appellation, where the wind cools the nights and lengthens ripening. Its calcareous soils and marl with fossil traces provide that unmistakable signature of minerality that has made the region famous. The northern, almost harsh climate carves the wine with a natural acidity that makes it sharp, gastronomic and tremendously refreshing: a French white wine with clear lines and a firm pulse.
Winemaking
At Joseph Drouhin Petit Chablis, the grapes are carefully selected and gently pressed to preserve their finesse. The must is cleaned by natural decanting and fermented at a controlled temperature in stainless steel tanks, avoiding any aromatic make-up. Ageing continues in the same vessel, on fine lees for several months, with very moderate lees stirring when the vintage permits. This work adds texture and depth without losing tension. Minimal fining and bottling designed to preserve energy: a clean, straight and true to the terroir style.
Taste
In the glass, Joseph Drouhin Petit Chablis is bright and crisp. The nose opens with tense citrus fruit - lemon, lime, grapefruit peel - and a hint of green apple; in the background, wet stone and a touch of flint. The palate is dry, vibrant and linear: the acidity propels the drink like an arrow and gives way to a chalky, almost saline sensation. The fruit is restrained, elegant, with a hint of pear and white peach. Long, clean and mineral finish, ideal with seafood, oysters, ceviche, sushi or grilled fish.
