Description
In Pommard, south of Beaune, Pinot Noir learns not to ask for permission. Here, the soil rules: sinewy clay and limestone underneath, a tandem that gives character, structure and that seriousness that is so typical of the village. Maison Joseph Drouhin - a family that has been established in Beaune since the 19th century - has never tried to "sweeten" this temperament. Their philosophy is Burgundian in the purest sense: listen to the vineyard, intervene just enough and let the Burgundy terroir speak clearly, even if that means a less complacent and truer wine.
Joseph Drouhin Pommard was born of a decision as simple as it was courageous: not to pursue a modern style, but a faithful profile. At Drouhin, during the ageing process, decisions are made mainly by tasting, wine by wine, barrel by barrel. This discipline - almost obstinate - ensures that every detail is in keeping with the identity of the place. The grapes are 100% Pinot Noir, and the framework is the historical tradition of the AOC Pommard: village wines with stone, with internal energy, capable of ageing and gaining nuances without losing their backbone.
Winemaking
At Joseph Drouhin Pommard, the grapes are harvested by hand, into aerated crates, with sorting if necessary. The grapes are completely destemmed in order to achieve aromatic precision and a more controlled extraction. Fermentation and maceration take around two to three weeks in small open vats, alternating punching down and pumping over to extract tannin and colour without being too harsh. Fermented with indigenous yeasts. Pressing is done in a vertical press, separating fractions according to tasting. Ageing continues in French oak barrels, with a moderate proportion of new wood, for 12 to 16 months, seeking to polish without making up.
Taste
In the glass, Joseph Drouhin Pommard appears deep and bright, with a deep red colour that promises character. The nose opens with black cherry, a hint of spice and a subtle echo of young leather. With air, the earthy side emerges: hints of undergrowth, a dry minerality and fruit that oscillates between red and dark without turning sweet. On the palate it enters straight, with that Burgundy red wine firmness that tightens the passage: tannins present, finely grained, and an acidity that keeps everything in tension. It is not a wine with an easy smile, but with a long look: serious, juicy, persistent, leaving a dry and elegant trace on the finish, like warm stone and cherry with skin.
