Description

In Chablis, where the wind cuts through and the light bounces off ancient stones, Joseph Drouhin learned decades ago that true luxury is not "doing more", but intervening less. The house - family-run since 1880 - embraced respectful farming practices and courageous decisions when they were not yet fashionable: working the vineyard with an organic and biodynamic mindset, seeking natural balance and a faithful reading of the landscape. In Joseph Drouhin Chablis Grand Cru Bougros, that philosophy becomes almost literal. This Chablis Grand Cru sits on Kimmeridgian limestone full of marine fossils: white, cold, sharp stone, which gives the Chardonnay an identity of unmistakable minerality and salinity. The plot, on the right bank of the Serein and with favourable exposure, provides a luminous tension even in generous vintages.

Winemaking

The Joseph Drouhin Chablis Grand Cru Bougros is harvested by hand, in aerated crates, preserving the integrity of the fruit. In the cellar, a slow whole bunch pressing is carried out in a pneumatic press, carefully separating the must fractions in order to favour finesse. After a gentle racking, fermentation and ageing take place in 500-litre barrels with a high oak content (no dominant new wood) for 12 to 15 months. The aim is to polish the texture without disguising the origin: to preserve the energy of the terroir, the aromatic precision and the dry, straightforward profile that defines a great Chablis.

Taste

In the glass, Joseph Drouhin Chablis Grand Cru Bougros appears pale, with greenish reflections. The nose is fine and serious: citrus, lemon peel, a touch of discreet white flower and a note of wet stone reminiscent of shell and chalk. With air, elegant herbal nuances and a smoky hint of flint emerge. On the palate it enters broad and silky, but then sharpens: the acidity draws a clean line, the salinity lifts the whole and the minerality sustains a long, fresh and chalky finish. A Burgundy white wine for lovers of precision: it does not seek easy volume, but clarity, tension and gastronomic persistence with seafood, fish and restrained butter sauces.
